Cinnamon Rosemary Pancakes with Pear Compote


A few days ago I posted a recipe for a Pear Havarti Panini, which was flavored with rosemary and cinnamon. I loved the pear, rosemary, and cinnamon flavor combination so much that I decided to use them again, this time for pancakes. I was really happy with the results.

Getting Started

Since I don’t often make pancakes, or bake in general, I decided to go off of a recipe I found from allrecipes.com. Of course I made some modifications to fit my liking, which I’ve listed below. However, if you have a pancake recipe that you like, feel free to use it; simply add the cinnamon and rosemary and top with the glazed pears. If you don’t have a favorite recipe and don’t want to make it from scratch, prepackaged pancake mix works just as well.

The Pancakes

I started by mixing together all of the dry ingredients until incorporated evenly. Then I added the wet ingredients and stirred until blended. Don’t over stir it, or your pancakes will turn out flat (I reminded my wonderful husband of this as he beat my pancake batter to oblivion). Cook the pancakes in a lightly oiled skillet over medium heat until golden brown and cooked through, just a couple of minutes per side or less.

 
          Ingredients

          1 1/2 cups all-purpose flour
          3 1/2 tsp baking powder
          1/2 tsp salt
          1 tbs white sugar
          1 1/2 cups milk
          1 egg
          3 tbs butter, melted
          1/2 tsp cinnamon
          1 1/2 rosemary sprig, finely chopped (reserve some for garnish)
          Maple syrup for topping

The Glazed Pears

While my pancakes were cooking, I cut a very ripe pear into slices and sauteed it over medium high heat with the butter, sugar, and cinnamon until soft and the juices started to thicken (about 8 minutes). At this point you can remove from heat and place in a serving dish.

  
          Ingredients

          1 large (or 2 small) ripe pear, cut into slices
          2 tsp butter for sauteing
          1 tbs sugar
          1/2 tsp cinnamon

Putting it Together & Wrapping it Up

I served my pancakes with the pear compote, a drizzle of pure maple syrup, and an additional sprinkle of rosemary - Yum! This recipe was pretty easy to make, and I only had to hide one burnt pancake in the pile, which could very well be a new record for me!
