Thai Inspired Veggie Wrap




Do you ever find yourself in a serious lunch rut? I do on a pretty regular basis. My crazy kicks mixed with my desire to do as little as possible when it comes to prepping for the busy week doesn’t help. Taking a healthy lunch to work is a high priority for me, but I just don’t want to spend too much of my precious free time putting it all together.  So, in an effort to diversify my lunchtime experience while still being able to maximize my time, I’ve been experimenting with adding different flavors to some of my quick and easy favorites to bring a little life back to my boring noon-hour.

That’s exactly what I did with this spin on a typical veggie wrap. By adding some classic Thai flavors, like peanuts, peppers, celery and carrots, I added a lot more flavor and gave my taste buds a break from my usual hummus and feta combo. It was surprisingly good, and I’m actually looking forward to the work week now! (well, kind of…ha ha)

Getting Started


Start by cutting up all of your veggies. Make sure to slice the carrots and celery very thinly, and be mindful not to cut yourself! You don’t want the carrots to be too crunchy, or the celery to overpower each bite.

After your veggies are prepared, spread a thin layer of peanut butter all over your tortilla. I think it’s pretty important to use natural peanut butter here; a lot of peanut butters out there have sugar in them (in some form), and I’m not sure how that would turn out. I used 1 Tbs of peanut butter for mine because I wasn’t sure if it would hijack the flavor, but I actually think I could have used more – the peanut butter was my favorite part!

All you have left to do is layer on your desired amount of veggies, sprinkle on some green onion and red pepper flakes, and roll it all up! It really is that easy! 

If you want a tip about rolling up your tortilla, make sure to put all of your veggies in a line starting closer to one side of the tortilla; the other side will become the end of the wrap, so nothing falls out. 

Ingredients

Natural peanut butter
Romain lettuce
Red and green bell peppers, sliced
Carrots, thinly sliced
Celery, thinly sliced
Green onion
Red pepper flakes
Jalapeno flavored tortilla 

All ingredients are to taste.

  4. Thankfully, I'm actually super excited about this green lentil soup because it combines two of my favorite things - cheesy garlic mashed potatoes and spinach. I use total vegan ingredients for these baked stuffed mushrooms but if that's not your thing you can just as easily serve the crown over a bed of greens with cranberry almond butter or hummus on top.
